Picklelicious Eastern NC BBQ Quesadilla with Creamy Mustard Dipping Sauce

Chicken and cheese together are delicious, but Mt. Olive Little Sister Sweet Green Relish mixed with the flavor of the honey mustard dressing and NC BBQ put the taste over-the-top for deliciousness!

Picklelicious Eastern NC BBQ Quesadilla with Creamy Mustard Dipping Sauce

Ingredients:
5 flour tortillas (fajita size)
2 cups shredded Colby jack cheese
1 cup shredded eastern NC BBQ (I used BBQ from Nahunta Pork Center)
1/2 cup Mt. Olive Little Sister Sweet Green Relish

Creamy mustard dipping sauce ingredients:
1/3 cup mayonnaise
2 tablespoons yellow mustard
2 tablespoons honey
2 teaspoons paprika

Directions:

  1. In a large bowl mix cheese, BBQ and pickle relish until combined.
  2. Spread 1/5 of mixture on 1 flour tortilla. Fold tortilla in half and place in a medium frying pan on medium high heat or on a sandwich press.
  3. Cook tortilla for two minutes until the tortilla is lightly browned and crispy. Continue this process until all 5 quesadillas are complete.
  4. Cut Quesadilla into wedges with a pizza cutter and enjoy.
  5. To prepare the creamy mustard dipping sauce combine mayonnaise, mustard, honey and paprika in a small bowl and serve with the Quesadilla for dipping.
